A great way to have a quick tex-mex inspired breakfast. Start with a few Red Bliss Potatoes, chop them up into small cubes and toss them into some boiling water to soften a bit.
Drain and season with some Simply Marvelous Season All.
While they are draining and cooling a bit, fry up some breakfast sausage in a skillet.
I had sweet breakfast sausage so I spiced it up with some Habanero Death Dust.
Once the sausage is done, toss them into the same skillet and give them a nice crisp fry on the outside. I added some onion. Use the sausage fat as oil, add more extra oil if needed.
Once the Potatoes are done, pull them off and fry some eggs in the same pan.
Once the eggs are more then partially cooked but not fully cooked pull them off.
Now let’s assemble the pepper. Core a Pablano pepper
Get your fillings in order and ready and then stuff them in layers in the pepper.
Once all stuffed, toss the Breakfast Stuffed Pepper onto the grill to roast the pepper.
I then sliced one side open and topped with a Spicy Verde sauce and fresh chopped garden tomatoes and a sprinkle of some fresh cracked pepper and sea salt.
